  • Six boneless chichen breasts
  • can of bread crumbs (reg or italian) your choice
  • 1 cup of all purpose flour
  • half pound of bacon (thin sliced)
  • one 12oz block of provolone cheese
  • small chunk of locatelli romano cheese
  • 1 can of tomato puree
  • fresh minced garlic- 2 cloves
  • 1 can of stewed tomatos
  • 1 small can of tomato paste
  • 1 cup of milk
  • oregano basil parsley salt and pepper
  • frying oil

Clean the chicken and butterfly the breast pound with a mallet lightly
cut the cheese into 6- 2oz bars
dip the chicken breast into the milk
dredge in the flour
repeat again but this time in the bread crumbs
put the cheese into the pocket of the butterflied chicken
close tightly
wrap the bacon slices around the entire chicken breast
leave about a half inch of space between the bacon spirals
so it looks like a candy cane
pin the ends of the bacon with toothpicks
deep fry in your favorite oil- i use canola
just deep enough to cover the breast
cook until it starts turning golden brown (about five minutes or so)
dont worry about the chicken being fully cooked
if you see cheese coming out remove faster.
remove breast and toothpicks (they will stay together now without them)
now in a large casserole baking dish combine all three cans of tomatos
season slightly with italian spices and add garlic
slowly add in the chicken breast
the sauce shouldnt be more than half way up the chicken
sprinkle the dish with fresh romano cheese and parsley
bake at about 275-285 degrees for up to 60 minutes (covered)
five minutes un-covered to bring out more flavor in the cheese
check chicken for doneness-
serve with an italian veg- i like italian green beans
take a bow and enjoy the ticker tape parade!,,
